We are proud that the hotel and restaurant Ett Hem in Stockholm has chosen to invest in a deck oven from us, complete with an integrated prover. A solution that not only increases capacity but also creates even better conditions for artisanal baking at the highest level.

Baking Stories by Sveba Dahlen: Wofflans Stenugnsbageri in Vega

We visited Wofflans Stenugnsbageri in Vega, Sweden, and met Sarah, who has recently taken over the bakery.

Sarah is 34 years old, and has been working as a baker for almost 14 years. She was originally trained as a farmer, but quickly realised that it was more fun to bake with flour than to grow it.

Her passion for baking goes far beyond the finished product. She is deeply fascinated by the techniques, the process and the chemistry behind baking - and the fact that it tastes good too certainly doesn’t hurt.

Wofflans Stenugnsbageri in Vega is a small artisan bakery where Sarah currently handles the production herself, supported by five fantastic shop colleagues. The bakery is moving steadily and purposefully towards a focus on organic and locally produced ingredients.

As Sarah puts it: “Better to be delicious than boastful.”

When we asked Sarah about her favourite Sveba Dahlen product, the answer came without hesitation: the stone hearth oven (the electric Deck Oven).

“It’s the best oven I’ve worked with so far. It’s easy to use, delivers incredibly even results, and is a beautiful feature in the bakery.”
