Sablée crust, cashew frangipane, rhubarb compote and burnt honey mousse.

The rhubarb compote brings the perfect balance of jammy sweetness and fresh fruit texture, while the burnt honey mousse adds depth: slightly smoky, gently bitter, and beautifully floral.

This is the large version of our rhubarb monoportion — around 1.5 kg, serving 10–12 people.

Both the monoportion and the large version will be available at the same time.

Rhubarb season is finally here.

We paired spring rhubarb with alpine honey sourced from a fellow vendor at the town farmers’ market: floral, slightly wild and deep enough to stand up to the fruit’s sharp acidity.

The result is our new seasonal monoportion: burnt honey mousse, rhubarb compote and cashew praline crunch, wrapped in a thin white chocolate collar.

Fresh, toasted, sharp and balanced.
