Last few days for our plum dumplings, as plum season is surely closing in on us.

It is during this last few stretches of plum season that we end up with a bunch of over ripe plums we cannot use for . So this season we turned to our Fermentary and started on a plum “balsamico” of sorts, fermenting the plums and trying to get a syrupy balsamic vinegar-like concoction, which we can later use in our bakes.

For now the plums are fermenting like 🔥, we’ll see in a few months how that plum-almost-balsamico ended up.

Plum dumpling season to be closing very soon, so if you want a farewell gombot this is your call.

Balmoș is a traditional sheperd’s food made by boiling the corn flour in ‘jintuială’, a fatty whey left from making cheese. It’s then mixed with cheese and you get a very creamy polenta. It’s often open fire cooked which also grants it a specific smokiness. It’s a very simple sheperd’s hut kind of food.

A kouign amann is a breton pastry made by folding sugar through the layers - when the pastry bakes, the sugar turna glassy giving it a crunchy exterior whilst the inside stays soft and chewy.

We wanted to bring the two together. Romanian tradition and french fine pastry.

But a savory kouign amann is something that technically just doesn’t work. You need a replacement for the sugar to give it that crunch and not many things caramelize the same way sugar does.

So we tried. We made a balmoș spread and cooked it in fat - it split. We tossed it and started anew. When we thought we made it, it tore when we tried to fold it into layers. Toss and restart.

We prepared about 20 different elements for this pastry to come together. Alas it’s here: crunchy on the outside, smooth and balmoș-y on the inside.

Furthermore, bringing the personality of a freshly prepared balmoș in a pastry that goes through various stages and is ultimately baked was also challenging. We wanted to keep the specific goat and sheep cheese aroma - caprylic and capric acid as well as glutamates for umami.

We were supposed to make it only for a special event we hosted for Bucharest Food Week, but you asked for it so here we go.

Balmoș kouign amann:
👉100% sourdough corn croissant dough
👉Laminated with a balmoș spread made with jintuială and copious amounts of aged Romanian cheese
👉Crunchy corn ‘frico’ base
👉Topped with smoked sour cream, to bring that open-fire cook feel to it
👉Finished with some more aged Romanian cheese and fresh thyme

Only this Saturday and Sunday at 10:45 - yes, it’s very specific, many things had to get pushed around in our production schedule to make room for this.

This is something to be enjoyed as fresh as can be - so please don’t let it sit in a box for hours before munching on it and by all means don’t leave it to the next day.

October is here and our fall-winter menu is slowly coming together.

Cardi B, our cardamom and coffee soft bun knot is making a return this Friday.

This year we made a slight adjustment to the dough, we implemented some of the know-how we managed to gather from making our 100% sourdough croissant this year and so this 100% brioche dough is more pillowy than ever. Still zero yeast and all flavour.

Catch it daily after 10:00. Chez nous only.

Balmoș. But make it kouign amann.

Or a kouign amann with no sugar in it. Which is exactly what makes a kouign amann, a kouign amann.

When Calatorii si Farfurii | Travel and Plates came to ask us to do a cocktail pairing with Moena Wermut as part of Bucharest Food Week we knew we wanted to make something special for this occasion. So we started working on this a few weeks ago.

To say it was the most difficult pastry we ever attempted would not be a stretch. A kouign amann is a croissant pastry layered with caster sugar - when baked the sugar turns to glass making the pastry crunchy. We knew that replacing sugar with the cheese we used for balmoș was going to be hard.

We just didn’t know how hard.

We had to include the balmoș as an insert and layer it. Only balmoș isn’t a simple sugar filling, it’s basically a polenta gel. It fractures instead of stretching during lamination. We cooked it with the fat and it split in the pan. We cooked it without fat and it came out dry.

We smoked things and we split things, then put them back together. We failed more times than we can count.

And beyond this all - the question. Is this still a balmoș or did we just make a corn and cheese bun?

We still have no idea. Well, here it is.

Balmoș kouign amann:
👉Flint corn (from Cerne Soare) milled with germ and all
👉A balmoș spread made homemade jintuială (a sort or buttermilk/zer), caramelized whey, a ton of aged Romanian cheese
👉Corn and cheese ‘frico’ base
👉Topped with smoked sour cream
👉Finished with grated De Colțești - Torockoi parmezan-type cheese and fresh thyme
All on our 100% corn croissant dough.

A truly heavy undertaking, so much so that it is unlikely we will ever make it again.

Available only during our cocktail and pastry pairing as part of Bucharest Food Week, today. Thank you for getting our creative juices going with this, glad to be a part of this great event.

The fig cruffin is one of the very few products where we actually kept it simple. Instead of going the route of overcomplicating things we chose to highlight the beauty of the entire tree, leaves and fruit, with the least amount of intervention.

So our job here was merely assisting a beautiful ingredient.

Fig leaf infused ganache. Fresh figs gently simmered in kombucha to highlight their flavor, complete with some lacto-fermented sea buckthorn (from Melinis, a beautiful Romanian enterprise) to give it a slight boost of acidity. Powdered fig leaf to coat them and fresh figs on top. All on our 100% sourdough cruffin.

We were caught off guard by your love for figs so we were sold out pretty fast both on Saturday and Sunday.

So we are baking it every single day during fig season. It’s very short tho, so don’t sleep on it.

Seasons are changing and autumn is clearly settling in. So these days we wave goodbye to our pistachio raspberry tart and to our linden sour cherry danish.

This is the last weekend when they are available, we will be making them for the next few days only.

We will slowly start prepping for all that autumn has to offer. And it looks like it has a lot in store for us.

Come wave goodbye to your summer favorites before they are gone and worry not, they shall return next summer.
