This cake is gluten-free and refined sugar-free as well as dairy-free.
Why would I make a cake without any of those ingredients? Let me tell you a short story.
For a little bit over a year, my body went through a massive transition from being almost healthy and active to becoming bedridden and constantly ill and in pain.
That's when I found out that I have an autoimmune disease.
I had to change what I eat and everything I do to help my body heal.
It's been a difficult journey and is still going.
The major things I had to quit were refined sugar, anything that has been treated with hormones and anything ultra-refined as they call it (GMO food, flour, hydrogenated oils, dairy..etc).
I thought I would never be able to eat any cake ever again, this cake is proof that I was wrong.
