This was unexpected. The bun on the left was baked immediately after the pretzel bath and came out as expected. The right one was refrigerated after the pretzel bath for a day. I’ve done this in the past with bagels and pretzels, and they’ve always come out the same. Not sure what happened here. 🤔 Hoping they still taste the same.

While visiting Drôme Provençale, I decided to bake some sourdough. Unfortunately I didn’t bring any starter with me, so I had to create my own. After a week, I gave it a try. Turned out alright for an immature starter!

(Chocolate Chip) Cookies made with three different types of sugar. Everything else was exactly the same. On the left, yellow sugar (which is available everywhere in Portugal), in the middle, light brown sugar (not as common but still available in most larger grocery stores), and on the right, dark brown sugar (very rare, mostly imported, and hard to find). The yellow and light brown are very similar in taste and colour. The yellow tasted just ever so slightly better. The dark brown are considerably darker and have a more intense taste. But very good.

Tried something different. With all the grapes, I was looking for all sorts of ways to use them. So this is my grape must bread. I fermented the juice from freshly-pressed grapes for a few days, and then created a grape yeast starter. Added water, flour, salt, and mixed it. Let it rise overnight. Then baked it in a Dutch oven. I was happily surprised at how well it turned out.
