To keep your taste buds curious this spring.

Every week a different flavor
A 1/2 baguette with old and tested but also new and experimental flavor combinations.

All are made with Organic ingredients and leavened with sourdough for 24h

-Rye & Walnut
-Barbela, Caramalized Onion & Garlic
-Spelt Honey & Oat
-Light whole wheat, sunflower seeds, cia seeds & toasted fennel
-Wheat, olive & rosemary

RYE: The Great Grain Heist
(Portuguese below)

Rye is history’s most successful evolutionary squatter. It didn't start as a crop; it started as a w**d that "tricked" its way into our diet.

How the "Imposter" Won:

* THE DISGUISE: In early wheat fields, farmers pulled any w**ds they recognized. Rye evolved to look exactly like wheat to avoid being plucked.

* THE HITCHHIKER: It adapted to keep its seeds on the stalk (just like wheat), forcing humans to accidentally harvest, store, and replant it every year.

* THE BIG BREAK: When farming moved into the freezing climates of Northern Europe, the wheat died, but the "imposter" rye thrived. Farmers had no choice but to start eating the w**d.

THE RESULT: A w**d that mimicked its way onto our dinner plates and became a global staple.

CENTEIO: O Grande Roubo dos Grãos

O centeio é o invasor evolutivo mais bem-sucedido da história. Ele não começou como uma cultura; começou por ser uma erva daninha que "enganou" toda a gente para entrar na nossa dieta.

Como Venceu o "Impostor":

* O DISFARCE: Nos primeiros campos de trigo, os agricultores arrancavam qualquer erva daninha que reconhecessem. O centeio evoluiu para se parecer exatamente com o trigo para evitar ser arrancado.

* O CARONEIRO: Adaptou-se para manter as suas sementes na haste (tal como o trigo), obrigando os humanos a colhê-lo, armazená-lo e replantá-lo acidentalmente todos os anos.

* A GRANDE OPORTUNIDADE: Quando a agricultura se expandiu para os climas gelados do norte da Europa, o trigo morreu, mas o centeio "impostor" prosperou. Os agricultores não tiveram outra escolha senão começar a comer a erva daninha.

O RESULTADO: Uma erva daninha que se infiltrou nos nossos pratos e se tornou um alimento básico global.

Happy first Advent.
I wasn't going to make Christmas cookies this year.
Then it got colder, then i got our Christmas decorations from the attic and here we go we have cookies again.
Starting with the traditional Lebkuchen something like ginger bread or spiced bread.
Lebkuchen comes in so many different ways this one is with Rye flour, nuts, honey and a home blended spice mix.
Warming and delicious.

Some benefits of long fermentation
In principle our bodies need about 18h to digest flour, in Sourdough bread the life culture and the fermentation time have done a large part of the digestive process.
This causes more minerals, vitamins and amino acids to be released.
Sourdough fermented bread has a lower GI index meaning it releases energy over a longer period of time.
Interestingly even though you feel full for longer time sourdough bread doesn't occupy the digestive system for a long time and therefore does not make the digestion process a long and laborious affair.

Sourdough bread is made from a life culture There are no 2 loaves that taste, look and feel the same.
The biggest changes in flavor normally happens during the change of seasons (Spring & Autumn )it is also when the best loaves are created
