Savory Egg Skillet with Cheese and Herbs

Ingredients:
2 tablespoons cooking oil
1 medium onion, finely chopped
2 medium tomatoes, diced
2 tablespoons garlic mayo
1 tablespoon tomato purée
2 tablespoons barbecue sauce
1/2 teaspoon salt
1/4 teaspoon black pepper
1/4 teaspoon paprika (optional)
4 large eggs
1/2 cup shredded cheese (cheddar, mozzarella, or your choice)
2 tablespoons chopped spring onions
1/2 teaspoon dried oregano

Instructions:
Heat the Oil: In a medium-sized skillet, heat 2 tablespoons of oil over medium heat.
Sauté Vegetables: Add the chopped onion and diced tomatoes to the pan. Sauté for approximately 3 minutes until the onions become translucent and the tomatoes soften.
Add Sauces and Spices: Stir in the garlic mayo, tomato purée, and barbecue sauce. Sprinkle in the salt, black pepper, and paprika (if using). Mix well and cook for 1 minute to allow the flavors to blend.
Cook the Eggs: Gently crack the eggs into the pan, being careful not to scramble them. Leave the eggs whole. Lower the heat to a simmer, cover the pan with a lid, and cook for 2-3 minutes, or until the eggs are set to your desired doneness.
Add Cheese and Herbs: Sprinkle the shredded cheese evenly over the eggs, followed by the chopped spring onions and dried oregano. Cover the pan again and let it cook for an additional 2 minutes, or until the cheese has melted.
Serve: Carefully slide the eggs onto a serving plate. Serve warm with toast or garlic bread.
