—The Only Rustic Berry Garden Salad Recipe You Need! —

Creamy cottage cheese, sweet and tart blackberries, and a whole lot of crunch — a bowl of textures, colors, and flavor.

INGREDIENTS:

Salad Ingredients:
1 salad pack (mixed greens)
Extra salad mix greens (optional, for volume)
Cherry tomatoes, halved
½ cup cottage cheese
A handful of blackberries
1-2 ripe avocados, diced
Walnuts, roughly chopped
Pumpkin seeds
Sunflower seeds

Honey–Pomegranate Vinaigrette:
2 tablespoons olive oil
1 teaspoon pomegranate molasses ( use balsamic vinegar as alternate)
1 tablespoon honey
½ teaspoon salt (adjust to taste)
½ teaspoon black pepper (adjust to taste)

DIRECTIONS:

Add the mixed greens to a large bowl and gently toss to loosen.
Scatter the cherry tomatoes, blackberries, and diced avocado over the greens.
Spoon the cottage cheese on top in soft, uneven dollops.
Sprinkle over the walnuts, pumpkin seeds, and sunflower seeds.
In a small bowl, whisk together the olive oil, pomegranate molasses, honey, salt, and black pepper until emulsified.
Drizzle the vinaigrette over the salad just before serving.
Toss gently or leave layered for a more rustic presentation.
