Chicken Nihari
Ingredients
For Nihari Masala
Saunf (fennel seeds) 2tsp
Laung (cloves) 3-4
Hari ilaichi(green cardamom) 3
Sabut kali mirch(black peppercorns) 5-6
Tez paat(bay leaf) 1
Pipli(long pepper) 2
Badiyan ka phool(star anise) 1
Bari ilaichi (Black cardamom) 1
Kala zeera (black cumin) 1/2 tsp
Jaifal(Nutmeg) 1/2
Javatri(Mace) 1 leaf
Lal mirch powder(red chilli powder) 1/2 Tbsp
Dhania powder (Corriander powder) 1/2 Tbsp
Haldi 1 tsp
Sonth (dried ginger powder) 1 tsp
Kashmir Lal mirch powder 2 tsp
Salt 1 tsp
For the gravy
Chicken 1 kg
Ghee 1/2 cup
Ginger garlic paste 1 Tbsp
Water 5-6 cup
Ata 2-3 Tbsp
Water 1 cup
For the Tari
Kashmir Laal mirch powder 1/2 tsp
Ghee 1/4 cup
Serve with
Fried onion
Corriander
Green chillies
Lemon
Ginger julienne
Method
-In a dry spice grinder, add Saunf, Laung, Hari ilaichi, Sabut kali mirch, kaala zeera, Pipli, Tez paat, Badiyan ka phool, Bari ilaichi, jaifal and javatri.
-Grind into a fine powder.
-To this powder add red chilli powder, sonth, Haldi, kashmir Laal mirch powder and salt.
-Mix very well.
-This nihari masala can be stored in an airtight container and may be used whenever needed.
-In a pot add ghee and let it melt.
-Now add chicken and cook until the color changes to white.
-Add ginger garlic paste and mix well.
-Next add the prepared Nihari Masala and mix.
-Add 5-6 cups of water and let it boil.
-Cover and cook on a medium flame for 35-40 minutes or until the chicken is 3/4th done.
-Dissolve Ata in extra water and add it to the nihari stirring continuously.
-Cover and cook on a very low flame for another 10 minutes or until the chicken is completely done.
-Dish out in a serving bowl and top with Tari, fried onion, Corriander, green chillies, lemon juice and ginger.
-To prepare the Tari, melt ghee in a pan and add kashmiri Laal mirch powder.Mix for a minute and pour on prepared nihari.
-Serve hot with Naan or kulcha.
