The process starts with lacto-fermented labuyo chilies. This is then left at room temp for 7 days to intensify its flavor. It ends with being lightly cooked with the perfect ratio of honey! The perfect combination of your sweet and spicy.

A little trivia about this aged meat: Guanciale got its name from the word "guancia" which translates to
"cheek" in Italian. Guanciale adds salty and fatty notes to dishes that's why it's a perfect companion for pastas and sauces!
