Homemade double Chocolate Cupcakes
Ingredients
For the Cupcakes:
1 cup (120g) all-purpose flour
½ cup (45g) unsweetened cocoa powder
1 teaspoon baking powder
½ teaspoon baking soda
¼ teaspoon salt
½ cup (113g) unsalted butter, melted
¾ cup (150g) granulated sugar
¼ cup (50g) brown sugar
2 large eggs
1 teaspoon vanilla extract
½ cup (120ml) buttermilk (or milk + ½ tsp vinegar)
½ cup (120ml) hot coffee (or hot water)
½ cup (90g) chocolate chips
For the Chocolate Frosting:
1 cup (226g) unsalted butter, softened
2 ½ cups (300g) powdered sugar
½ cup (45g) unsweetened cocoa powder
½ teaspoon salt
1 teaspoon vanilla extract
3–4 tablespoons heavy cream or milk
Instructions
1. Prepare the Cupcakes:
Preheat oven to 350°F (175°C). Line a muffin tin with cupcake liners.
In a bowl, sift together flour, cocoa powder, baking powder, baking soda, and salt. Set aside.
In another bowl, whisk melted butter, granulated sugar, and brown sugar until well combined.
Add eggs one at a time, beating well after each addition. Stir in vanilla extract.
Alternately mix in the dry ingredients and buttermilk, starting and ending with the dry ingredients.
Stir in hot coffee (batter will be thin). Fold in chocolate chips.
Divide batter evenly among cupcake liners, filling each about ⅔ full.
Bake for 18-22 minutes, or until a toothpick inserted in the center comes out clean.
Let cupcakes cool completely before frosting.
2. Make the Chocolate Frosting:
In a large bowl, beat butter until creamy.
Sift in powdered sugar and cocoa powder, then mix until combined.
Add vanilla extract, salt, and heavy cream (one tablespoon at a time), beating until smooth and fluffy.
3. Assemble the Cupcakes:
Pipe or spread chocolate frosting on cooled cupcakes.
Garnish with extra chocolate chips, sprinkles, or a drizzle of melted chocolate.
