Tarta de Quezo or simply know as the Basque Burnt Cheesecake. This simple yet incredibly creamy cheesecake is a decades-old local specialty of La Viña Bar in San Sebastián.

It is baked on a high temperature which leaves the outside firm, darker, and somewhat burnt. The burnt taste that adds flavor to the already delicious cheesecake.
