Sharing my fluffy mamon cake...

Dry Ingredients
1 cup cake flour
1/4 cup cornstarch
1/2 tbsp baking powder
A pinch of salt

Wet ingredients
6 egg yolks
1/4 cup vegetable oil
1/4 cup milk (fresh or evaporated)
1/4 cup sprite (or any juice you want)
( greeted cheese for optional but must try)

Meringue
8 egg whites
1/2 tsp cot
1/2 cup white sugar

Procedure
Mix all dry ingredients followed by wet ingredients
Mix together dry and wet ingredients thoroughly
Start preaheat oven at 350f and boiled water
Beat meringue until soft peak then cut n fold
Put in the oven in a BIEN MARIE METHOD for at least 15 - 20 min.
After 15 min try to insert toothpick if it's already done or you can put greeted cheese then continue for 5 min in the oven. Or its up to you kng after na ma luto mo ilagay ang cheese.....in my case hinalo ko na ang cheese sa pag salang palamang...😄😄😄

Churros lover
Ingredients
1cup Apf
1/2 cup water
1/2 cup milk (fresh or evaporated)
2 tbsp brown sugar (white sugar will do)
1tsp baking powder
1/2 tsp vanilla
2 eggs at room temperature
A pinch of salt
1/2 cup butter ( you can use vegetable oil if you don't have butter)
Cooking oil

Procedure
1. In a pan combine water, sugar, salt, and melted butter. Stir to dissolve sugar. Bring to boil.
2. Add flour and baking powder. Stir the dough around your pan and cook it for about a minute over low heat.
3. In another bowl combine eggs and vanilla and whisk together. Incorporate a little of your egg, mix into your dough. Stir and smash well until eggs and dough are loosened.
4. Fill piping your bag or piping tube filled with a star tip.
5. Pipe strips of dough in a parchment paper or directly in a heated oil. Deep fry strips dough until golden brown. Drain in a paper towel to remove excess oil.
6. Coat with sugar or any chocolate dip or anything you desired....

Note: if you want chocolate Churros just add 1/4 cup unsweetened cocoa and 1/4 cup water then ingredients are as follows...
