For today’s lunch, we paired our classic sourdough loaf with our vegan pesto genovese, sautéed shiitake mushrooms and a sprinkle of feta.

Sourdough is perfect for making “fast food” because it tastes so good it can elevate the most mundane of sandwiches. The secret lies in its long natural fermentation, when wild yeasts and beneficial bacteria begin breaking down gluten and starches, making the bread easier to digest while enhancing flavor and nutrient absorption. The result is bread that nourishes as much as it satisfies.

Our vegan pesto genovese adds another layer of goodness. Made from fresh basil, cashews, extra virgin olive oil, garlic, lemon, and nutritional yeast, it delivers freshness, flavor, healthy fats, and plant-based nutrients that pair beautifully with our bread.

The feta is optional—added here for extra protein and creaminess—but the pesto alone is already deeply satisfying. We like mushrooms as a protein source too so why not.

For a quick yet elegant lunch, enjoy it open-faced like this. Lightly grill the bread slices, then top with pesto, mushrooms, and feta. Need a heftier baon? We love enjoying sourdough the Pinoy way. Simple, fresh and fast. Here’s our version of pistu at pan de sal.
