The Black Whisk Manila finally has a home online.
You can now browse the menu, read the stories behind the brand, and follow along as this small-batch, flavour-forward project grows.

For now, ordering stays personal through Messenger or Viber so we can confirm freshness and lead times:

I found this old photo of me from about 15 years ago — proudly holding the chocolate pieces I molded during my Basic and Advance Chocolate Molding Certificate class at the Castle of Chocolate Baking & Confectionary Arts, hosted inside Chocolate Lovers in QC.

And today, I found out that Chocolate Lovers is closing its doors after 36 years.

There’s some irony in that timing.
The place where I first learned real chocolate is ending…
just as I’m finally beginning my own chapter in The Black Whisk Manila.

🌀 Lessons From My Late-Night Bake Adventures 🍞✨

So I recently tried the Yudane Japanese method of making milk bread for my cinnamon rolls — and wow, the dough turned out so soft! I don’t put a ton of cinnamon (not everyone’s a fan of strong flavours), and I keep the frosting light — just a tiny bit of sugar, because honestly, most frosted bakes out there are sickeningly sweet.

If you’ve seen my reel, you’d know I baked these in the wee hours of the morning — in true bakery style 😂 Who knew baking would turn a night owl like me into an early bird? (Barely though, coffee still required ☕).

Here are a few things I’ve learned so far — both about baking and about people:

1. People eat with their eyes first.
The Oreo and Biscoff rolls sell like crazy because they look so cute 😍 Meanwhile, my personal favourite — the pork floss cinnamon roll — barely makes it out of the house because my kids keep fighting over it 😂

2. Timing is everything.
Just because something’s fresh out of the oven doesn’t mean people will buy it right away. Turns out, the magic hour for cravings is between 3:00 and 4:30 pm — that’s when I usually sell out!

3. Shelf life matters.
I learned how to freeze the dough properly so I can bake only as needed — keeps everything fresh and helps me manage stock better.

4. Apply the 80/20 rule.
80% of profit really does come from 20% of your products. So next time, I’m focusing on the flavours people actually love. Sorry walnuts and raisins — you’re great, just not everyone’s favourite 😅

5. Be prompt and make customers feel #1.
Quick replies go a long way — it shows people they matter.

6. And lastly, don’t always follow the recipe.
Sounds odd, I know. But sometimes you’ve got to be brave and make it your own. Like how I balance sweetness with a sprinkle of sea salt on cookies — that’s not me forgetting to sift, that’s me doing me 😉
