Blue Cheese Basque Burnt Cheesecake with Blueberry Sauce. I’ll say that again, BLUE CHEESE.

If you know me, you’d know my love for blue cheese. I created my 4-cheese tarts with it, cookies that have yet to be released with it, and now this. I’ve dreamt about making this cake for as long as I can remember and I finally got the courage to do so, and my courage has been rewarded! 😅

This cake turned out so well! A creamy cheesecake with a blue cheese twist, not too overpowering, just enough to taste that bold, sharp, and salty taste distinct to blue cheese. Then you have the sweet and fruity punch of the blueberry sauce which cuts through the taste of the cheese and balances it with a bright and fresh finish. 🤤

A 7 inch cake is enough to feed 12 people or more as it should be sliced thinly. It can be served for dessert as is or as an appetizer with toasts or crackers for canapés, thanks to my aunt who did this at our small party yesterday. This was a hit!
