This is my own spin on the matcha cheesecake christmas tree being served in some cafe in Seoul, Korea. I don’t know their recipe but mine is a ganache-covered NY cheesecake sans the crust. As a matcha fiend, I want intense flavor so I ended up almost finishing the contents of my 30-gram tin - ouch. But I like how the strings of ganache hides a creamy cheesecake inside. Nom nom.

Everybody seems to be infatuated with matcha but hojicha tastes great, too. Hojicha is green tea that is roasted in a porcelain pot over charcoal to bring out the distinct notes of cocoa and earthy undertones. It is also good in baked goods like this Hojicha Burnt Basque cheesecake. This is gluten-free so it's perfect for those with gluten intolerance. Vanilla cheesecake sits atop the Hojicha flavored-one making this two-toned silky dessert a must try.

We strive to create elegant cakes that are pleasing to the eyes and palate and our latest offering fits the bill. Indulgent, chocolaty, a bit boozy from some brandy, cradled by a chestnut crust and slathered on top by a shiny chocolate ganache. No eggs, no dairy but packed with heady flavor. A small slice goes a long way. The handmade pinecone topper is totally edible with crunchy pine scales and a truffle interior. Gluten-free option is available. Why settle for ordinary?

Vegan raspberry macarons

I got a request from a mother whose daughter is celebrating her birthday. She wished for macarons but only if they are vegan. Mommy I._ also asked if I can put a tinge of pink because her daughter loves pink. I have a bag of vegan white chocolate from Auro so I thought why not make a raspberry ganache filling. Fortunately everything worked out well. The family came all the way from Cavite to pick up the macarons and I was later told they ate some while in the car and that they loved them. And that is all I needed to hear.

By the way, I told Mommy I._ I love her name because it is a feminine variation of my father's name and it means peace-loving and tranquil. And that's your little tidbit for the moment. Many thanks again, Mommy I._.
