Hazelnut Pudding
(4-6 serves)

Ingredients:
1 cup self-rising flour
1/4 cup of cocoa powder
1/2 cup of caster sugar
1 egg
1/2 cup of milk
50g of melted butter
1/2 cup chocolate hazelnut spread
1/2 cup of brown sugar
2 tbsp of extra cocoa powder
1 1/2 cup of boiling water
1/2 cup of chopped nuts

Method:
1. Preheat oven to 180C (160C fan forced). Combine flour, cocoa powder and sugar in the base of a 2 litre baking dish.

2. Make a well in the centre and add the egg, milk and butter, mixing the wet ingredients until combined before stirring into the dry ingredients until smooth. Stir in chocolate hazelnut spread.

3. Sprinkle the brown sugar and the extra cocoa powder over batter. Pour boiling water gently over the back of a large spoon, onto the cake batter.

4. Bake for 30 minutes, then, keep pudding in the oven, and sprinkle some nuts and cook for a further 10-15 minutes or until cake top is cooked and pudding is still saucy.

(Optional: serve with cream/ ice cream)

Basic Scones
(8 serves)

-Preheat oven to 425F
-into a large bowl, measure:
2 1/4 flour
2 tbsp. Granulated sugar
2 1/2 tsp baking powder
1/2 tsp baking soda
1/2 tsp salt
-using a pastry blender or fork, cut in:
1/2 cup of cold butter
-stir in:
Grated cheese (any kind)
-using the rubber spatula, add; 1 cup of buttermilk,
Stir to make a soft, slitghtly sticky dough, then:
-with lightly floured surface, press dough into a round ball.
-and knead gently 10 times.
-using a rolling pin, gently roll into 8 equal pieces & place on parchment lined baking sheet.

-use pastry brush, and brush the top of each wedge with egg glaze (1 beaten egg).
Sprinkle the top with some sugar.

-Now bake in preheat oven for 10-12 minutes.
Let it cool on rack.
