Oatmeal Revel Bars

Ingredients:

For the Oatmeal Crumb Layer
3 cups quick cooking oatmeal
2 1/2 cups all purpose flour
1 teaspoon baking powder
1/2 teaspoon salt
1 cup butter, room temperature
2 cups packed brown sugar
2 eggs, room temperature
1 tablespoon vanilla

For the Chocolate Fudge Layer
1 (12 ounce) package chocolate chips
1 (14 ounce) can sweetened condensed milk
2 tablespoons butter
1/2 cup chopped nuts, optional (pecans or walnuts are great)
1 teaspoon vanilla

Instructions:
1. Preheat the oven to 350° F. Whisk together the oatmeal, flour, baking powder and salt in a medium bowl, set aside.
In a large mixing bowl, cream together the butter and brown sugar until light and fluffy. Beat in the eggs and vanilla until well combined. Stir the dry ingredients into the wet and mix until well combined. Set aside.

2. In a medium saucepan, combine the chocolate chips, condensed milk, and butter. Heat together over low heat until melted, stirring until smooth. Remove from heat. Stir in nuts and vanilla.

3. Press half of the oat mixture in the bottom of a greased 9 x 13 inch baking pan. Spread the chocolate mixture on top. Crumble the remaining oat mixture over the top. Bake for 25 minutes or until lightly browned.

4. Cool and cut into squares.

5. Store tightly covered at room temperature for several days or freeze up to several weeks.
