Best gifts come in small packages! Introducing (mini) WINTER BLUE FOREST CAKE😊. 2layers of blue berry banana cake with magical cream cheese frosting. And take note, the frosting is not that sweet coz it doesn't have confectioner's sugar and have 50% of sweetness compared to the commercial cakes😊 who says a nurse and a teacher can't bake😉.

Tried using Coconut Sugar for my banana cakes. It has Low Glycemic Index of 35, compared to a normal table sugar with GI of 100 and above. Now you have healthier options to choose from: brown sugar with GI of 64, muscovado 55-65 and Coconut sugar.😊
