Two consecutive weekends.
Zero shortcuts.
So much learning.

Over the past two weekends, I carved out time to learn and hone my cake decorating skills. Far from perfect and that is exactly the point.

I never aim for perfection. I aim for progress.

This palette cake alone took almost six hours. Colour blending, pressure control, scraping, and restraint are not as easy as they look. Every petal teaches patience. Every mistake teaches awareness.

This workshop was absolutely worth my time. I learned so much and this is a technique I will confidently use when an order calls for it.

More than anything, I am deeply grateful that I allowed myself to learn something new amidst a very full and busy schedule.

Growth does not always look polished.
Sometimes it looks like tired hands, buttercream everywhere, and a heart that feels full.

Progress over perfection. Always

Seventy years, softened into layers you can feel before you taste.

A chocolate decade cake made for a life well lived.
Deep chocolate sponge brushed gently with orange cinnamon syrup, warm and nostalgic.
Dark chocolate ganache settles in between, followed by clouds of cream cheese whipped cream that melt slowly on the tongue.

The outside is kept light and elegant.
White chocolate ganache folded with fresh orange juice and cream cheese whipped cream, smooth and quietly indulgent.
Not too sweet, just enough to linger.

Finished with fresh daisies, carnations and roses, soft petals resting where memories meet celebration.

This is not just a birthday cake.
It is comfort, elegance and quiet joy.

Who says you can’t enjoy cinnamon rolls and live a healthy lifestyle?!

Today was supposed to be my slow dayđŸ˜čđŸ€ȘđŸ€Ș but I couldn’t resist the itch to bake for my boys.

Of course, I wanted it to be low glycemic and delicious!

For this batch of 12 beautiful CIMMANON ROLLS (as Miggy calls them),

I used:
Almond milk, olive oil, coconut sugar, honey for the dough — plus eggs for that extra protein boost!

For the filling:

Kerrygold butter, coconut sugar, and roasted pecans.

For the frosting:
Philadelphia cream cheese, heavy cream, and pure allulose = ZERO sugar!

Finished with a dusting of cocoa powder... soooo good!

Eating healthy doesn’t have to be boring

It just has to be real!
