Here is a popular recipe for making the Baked Chocolate Doughnut and the key to the flavor: the Butternut Streusel Coating.
🍩 Choco Butternut Doughnut Recipe
This recipe is divided into three main parts: The Doughnut Base, The Glaze, and The Butternut Streusel Coating.
Part 1: Baked Chocolate Doughnuts (Cake Doughnuts)
Ingredients
1 1/2 cups All-Purpose Flour
3/4 cup Granulated Sugar
1/2 cup Unsweetened Cocoa Powder (use Dutch-process for darker color/richer flavor)
1 tsp Baking Soda
1/2 tsp Salt
1 large Egg
1/2 cup Whole Milk
1/2 cup Buttermilk (or 1/2 cup milk + 1/2 tsp vinegar/lemon juice)
1/4 cup Vegetable Oil
1 tsp Vanilla Extract
1/2 cup Hot Water or Hot Coffee
Instructions (Doughnut)
Prep: Preheat oven to 350°F (175°C). Grease a doughnut pan.
Dry: Whisk together the flour, sugar, cocoa powder, baking soda, and salt in a large bowl.
Wet: In a separate bowl, whisk together the egg, milk, buttermilk, oil, and vanilla extract.
Combine: Pour the wet ingredients into the dry ingredients and mix until just combined.
Finish: Slowly mix in the hot water or hot coffee until the batter is smooth and runny. Do not overmix.
Bake: Spoon or pipe the batter into the doughnut pan. Bake for 10-12 minutes, or until a toothpick comes out clean.
Cool: Let cool in the pan for 5 minutes, then transfer to a wire rack to cool completely.
Part 2: Butternut Streusel Coating (The Crumb)
This is the most crucial step for the signature flavor and texture. The "butternut" taste is achieved through a combination of milk/coconut and nutmeg.
Ingredients
1/2 cup All-Purpose Flour
1/2 cup Powdered Sugar
1/4 cup Milk Powder or Desiccated Coconut (finely ground)
1/4 cup (1/2 stick) Unsalted Butter, melted
1/4 tsp Nutmeg Powder (essential for flavor)
1/4 tsp Salt
1 tsp Bright Orange Food Coloring (liquid or gel)
Instructions (Streusel)
In a medium bowl, whisk together the flour, powdered sugar, milk powder (or coconut), nutmeg, and salt.
In a small bowl, combine the melted butter and orange food coloring.
Pour the colored butter over the dry ingredients.
Use a fork to quickly mix until the mixture is uniform in color and has a crumbly, coarse sand texture.
Part 3: Glaze and Assembly
Ingredients (Glaze)
1 cup Powdered Sugar
2-3 Tbsp Milk or Water (adjust for dipping consistency)
1/2 tsp Vanilla Extract
Instructions (Assembly)
Glaze: Whisk the powdered sugar, milk, and vanilla extract until smooth. The glaze should be fluid, but thick enough to coat the doughnut lightly.
Coat: Dip the top of a completely cooled chocolate doughnut into the glaze, allowing any excess to drip off.
Butternut Finish: Immediately place the glazed side down into the butternut streusel coating. Gently press the streusel onto the doughnut to ensure it sticks.
Let the doughnuts set on a rack for a few minutes before serving.
