Keto/Low Carb Cheesecake Recipe

Ingredients
CRUST
1 1/4 cup (140g) almond flour
1/4 cup(40g) powdered Erythritol
1/4 cup(56g) melted butter
1 Tsp vanilla extract
1 large egg
Pinch of salt
FILLING
25 oz (681g cream cheese)
1 cup (125g) powedered Erythritol
2 large eggs
1/4 slice lemon- Lemon juice

Toppings
1 cup heavy whip cream
2 tsp powdered Erythritol (adjust to taste)
3/4 cup keto/Low carb strawberry sauce/strawberry topping
Pre-heat oven: 302F/150C and spray or grease the springform pan with butter
1.To make the Crust: in a medium size bowl, Combine almond flour, Erythritol, melted butter, egg , vanilla extract and a pinch of salt.
2.Pour the mixture in the springform pan and spread evenly
3.Bake for 15 minutes and start making the Filling
4. For Filling: Place cream cheese and Erythritol in a bowl of Mixer. Use paddle attachment(I lost mine) instead of whip wire. Beat on medium speed until smooth. Add the vanilla extract , lemon Juice & eggs(one at a time)
5.Remove the crust from the oven and increase the temperature to 350F/177C.
6. Pour in the filling and spread evenly. tap the pan a couple of times
7.Bake for 30-35 minutes.
8. After baking the cake, run a knife around the edge of the pan to loosen it and to prevent cracking as it cools. Let it cool down to room temp. Cover with foil or cling wrap and refrigerate for 6 hours
9. For a nice presentation: cover the top with strawberries and frosting. remove the cake from the refrigerator 1 hour before decorating.
