For those who are requesting for a copy of the Recipe for Agedashi Tofu here it is.
AGEDASHI TOFU
INGREDIENTS:
1 package firm silken tofu (1 kilo)
BREADING:
Bowl #1
1 cup Cornstarch
1 tsp salt
1 tsp pepper
Bowl #2
1 Egg & 1 tbsp water
Bowl #3
1 cup Panko bread crumbs
SAUCE:
2 cups water
1/4 cup light soy sauce
1/4 cup cooking sake / cooking wine
1/4 cup sugar
1 teaspoon dashi granules (optional)
vegetable oil for frying
2 green onions, chopped
INSTRUCTIONS:
BREADED TOFU:
Drain the tofu and wrap it with paper towel to remove excess moisture, set aside for 30 mins.
Cut the tofu into large square cubes
Preheat your cooking oil in the frying pan
Prepare 3 bowls for breading the tofu
Bowl #1 combine cornstarch, salt & pepper
Bowl #2 combine egg & 1 tbsp of water
Bowl #3 panko bread crumbs
Roll the tofu cubes into bowl #1 make sure that the tofu is fully covered with the cornstarch mixture.
Next, place the floured tofu in bowl #2 make sure that the floured tofu is covered with the egg mixture
Finally roll the tofu into bowl #3, make sure it is covered with panko bread crumbs.
Deep fry the breaded tofu until it turns into golden brown
SAUCE:
In a small sauce pan combine water, soy sauce, cooking sake, sugar, grated ginger and dashi. Bring to boil and make sure all the sugar is dissolved.
Assemble the tofu into small bowls and pour the hot broth (sauce) on the fried breaded tofu and garnish it with chopped onion leeks
