In the meantime, while the oven is doing its magic, oat cookie dough is in the works. Because a dear friend has been asking and waiting for its comeback. This yummy treat will soon be back in the menu!

Oftentimes our flans don’t bake at the same time because of uneven heating. There are areas inside the oven that are hotter and areas that are relatively cooler. The first flan that came out cooked at the 60-minute mark while the other two at an extra 10 minutes. Usually a 5-10 minute difference in baking time.

Flan cakes are a bit more challenging to bake because there simply is no way of testing the flans sitting at the bottom of the cakes. So, we limit baking to two cakes at a time for better heat distribution. No overcrowding of pans.

For baking that don’t require baine-marie method like our oat cookies (oh yes! we do have amazingly good oat cookies, bringing them back maybe in June) or the other types of cakes or bread baking, we simply rotate baking trays for even cooking.

Yep, we did have a “getting to know” period with our oven before finally becoming besties 😁

These were for Miro’s 16th birthday celebration. Thankful to Mommy Therese 🧡 She’s not only a loyal VIP customer, but also a very dear friend.

Plus 1 Lemon Flan Cake for my friend, Ms. Celina. So happy with her feedback. She ate 1/3 of it! She liked most that the flan was very thick. Best of all, her 86 y.o. Mama liked it so much kay dili kaayu tam-is! Truly, one of the best compliments when older generation appreciate our cakes.
