TAPSILOG like no other — Started in the early 1980's in small eateries called "tapsihan". The meal was affordable, quick to prepare, and deeply satisfying, making it ideal for anyone looking for a heavy breakfast or late-night bite.

Tapsilog's rise coincided with the boom of tapsihan-style eateries, small roadside food stalls that specialized in quick, budget-friendly rice meals. Over time, the dish spread across the country, adapted by region, and elevated by restaurants — from street food to comfort food.

In the historical place in Kawit, Cavite (our mother Dely's hometown) lies surprisingly the most famous tapsihan in Luzon. This famous "TAPSILOGAN" that started in the mid 1980's has been sought after celebrities all the way from Manila, that made it so popular until this very day. Vlogs from FEATR, etc. made their way to the sought after humble eatery, HIDDEN Tapsi.

As a tribute to our roots and to our grandfather, Leon Encarnacion Sanez, (the last KATIPUNERO of Gen. Aguinaldo, who once cooked for weddings and fiestas back in his era), we made our own twist with this melt-in-your-mouth beef tapa as we made it chunkier but still tender to the bite. We paired it with our homemade achara, perfectly fried egg and vibrant Blueternate steamed rice topped with fried garlic.
