The past few weeks have been quite a ride for us! We’ve been busy fulfilling some really big orders, and we’re so grateful for every single one. But one day, something unexpected happened with one of our ingredients. We changed our flour supplier and we're not aware that the new flour has low hydration. It caused our dough to lose its structure as our recipe is for high hydration. So unfortunately, we had to discard an entire batch of dough which was for almost 40 sourdough loaves and 12 sourdough focaccia pans worth of orders. It was honestly heartbreaking, especially after all the time, effort, and ingredients that went into it.

But sometimes, baking comes with unexpected challenges. As painful as it was to start all over again, we knew we couldn’t compromise the quality of the bread we provide you. So went back to square one and baked all over again. It may not always be smooth behind the scenes, but we’ll always choose to do things right. Some of the dough we were able to salvage was turned into giant focaccia for us to consume personally and to share with friends.

Looking back, we’re so thankful to the Lord that this happened with an order that, while already big for us, wasn’t overwhelmingly huge. Maybe this is also His way of preparing us for even bigger opportunities ahead, teaching us, testing our process, and reminding us to always be ready. Thank you, Fandezars, for being part of our journey and for continuing to support our little home bakery, it truly means so much! God bless! 🙏

P.S. And yes, we were able to fulfill the order 3 days later. It took a little extra time, but we’re grateful for the patience and understanding of our customers. 😊💙
