Kapeng kape ka na ba?
Early on, meron akong rice bibingka fresh from the oven in cupcake size and mamon size 😍

This is my first take on Chef Jo’s rice bibingka. Iba nga talaga ang bibingka na ito, it bursts with flavors, sweet and salty, and very soft too. It’s far different from the traditional bibingka recipe na pinamana ng Yaya ko sa akin, we call her Nanay.

She was our neighbor in our hometown. She bakes bibingka everyday and sells it at the market; it was their main source of income. When her husband died, I invited her to come with us to take care of our youngest child. After a year, we got her youngest child to stay with us so she can continue her studies. She is now a full-fledged teacher. .back then, we shared her matriculation, Nanay advances her salaries for the tuition fee while I shouldered the daily allowance. They stayed with us for 14years beautiful years, with the normal ups and downs in life.

I usually get emotional every time I bake bibingka remembering Nanay Felisa who passed away about 3 years ago with a dreaded illness. She had CA which I only knew just about 2 weeks before she died. It was a sad reconnection indeed.

That is why medyo nasunog ito sila kasi na busy ako scan ng photos namin ni Nanay 🧡😛

Another thing is since matagal na ako nakapag bake, I forgot to lower down the temp since mas mainit ang convection oven.

Nakita ko rin ang difference ng output 😃 kaya next time, need to adjust the quantity on the cupcake size nag overflow kasi sila at dumikit dikit, naghanap yata ng kakampi.

So ano na, P100 per kilo pa rin ang sugar dito sa amin, di ko pa ito na costing kasi for family consumption lang muna as usual. Sabi ni husband ba’t ang dami mong ginawa. Told him, pwede yan i-freeze then re heat, kung ayaw mo dalhin ko ito sa office.. comments filtered 🤣 palabas na kasi kami going to office.

This is not your ordinary bibingka
Ingredients: rice flour, leavening agent, eggs, coconut milk, evaporated milk, butter, sugar, buko strips, cheese
