Pan de suelo, or "floor bread," was a Spanish-Filipino take on the French baguette, famously baked right on the blazing floor of a wood-fired pugón oven. This rustic method gave it a thick, blistered crust and a hearty chew-perfect for dipping into hot tsokolate or soaking up rich stews.
With the arrival of cheaper American wheat in the early 1900s, bakers shifted to softer four, gradually giving rise to pandesal - the pillowy bread we know today.
While the original pan de suelo was lean and crusty, we at Boy Panadero still honor its roots through traditional fermentation - using time to coax out rich, complex flavor. This version even without sugar added, is softer and doughier, and still carries echoes of the old-world tradition in every bite.
