Year 2012, after four years of waiting, a little bundle of joy came as a blessing in our home. My son was turning one and all preparations have been made for a simple celebration on his first birthday. I was looking for ideas regarding party favors and the cakepops came up. I was inspired by the works of Bakerella but I have little time to learn it right away, no tools, no knowledge about baking whatsoever... so for his first birthday I did managed to order online from Party Sisters in Pasig and knew right away that I really want to make something like it for my family. My husband at that time, was thrilled with the idea so he bought a stand mixer which I am terrified to touch, coz I don't know how to operate it. My brother-in-law referred me to Heny Sison Culinary School. I started a few classes in cupcakes, meringue and cookies so I won't have to ruin my mixer then decided to get the full course for 6 months... I fell in love with baking and I feel excited whenever I tweak recipes according to my taste and preference. I get to incorporate my creativity in cake decorating and feel a sense of achievement after finishing a piece that I really love to make. It's true that we eat with our eyes first - but people remember what food taste like more than the appearance. When we were deciding the market that we want to cater, we concentrated on the group that love the adventure of having good food, than those that just want to have something on the table. If we want to impart something on someone's celebration, we wish to genuinely have that same reaction that our family is enjoying when we share our food. The kind of satisfaction that is well sought-after. I would prefer someone who can’t wait to try it than someone who doesn’t want to touch it because it’s too beautiful... to learn all that, I enrolled the 6-month Essential Baking and Pastry Arts under the wings of Chef Heny Sison last 2014. What used to be a hobby became a part-time home business. Of all the things I have tried, baking is the only activity that helps me get up at 3:30 in the morning or stay late until 5:00 AM the next day just to finish an order. Nothing is more satisfying than a customer who appreciates the kind of hard work that goes with it. Everything that comes out of the oven, takes time... I wish people could understand that it's not fast food and that I am not online 24 hours a day to reply right away... we also have vacations, to relax from all the days work. I had an open-heart surgery last May of 2004 and been trying to avoid stressful environment for years... baking helps me relax which is why I’m also hoping it will continue to do so...
The cupcake bouquet and the cupcake monogram was inspired by my love for flowers. I had been searching for about a year to learn piping it. I do remember the little royal icing roses that I used to eat in sari-sari stores. I found Cai Ladion of Caicakes online offering korean buttercream flower piping classes. Her piping skills are superb. I have also been following the works of Ms Jing Fernandez of Sorellefloralcakes for months but I always miss her classes when I am available... so when she finally came back in Manila I immediately grab the opportunity to learn from her as well. I love playing with colors and her style really brings out the edible gardening in me... hehe... like any other mom who loves Food Network I watch most of the baking and cake decorating shows apart from the movies and HGTV home makeovers... Family and friends were my first customers, they are also the best critics coz they still eat what I make no matter what. If they love it, that's when I know someone else will.
