My 5th pandesal recipe test and I'm quite satisfied with the taste, crustiness, and softness of this extra large pandesal.

For me, childhood is filled with memories of going to the bakery early in the morning to buy freshly baked pandesal. I remember those times of fighting for the attention of the busy tindera among a crowd of customers, the feeling of satisfaction to finally hold in my hand that warm brown paper bag, opening it and holding it up to my face to inhale that steaming glorious smell. But sometimes that moment of happiness would turn out to be a disappointment when you bite into that pandesal and discover that they've given you a hard, chewy, near-stale and reheated bread. I know many of us can relate to that.

That's why I've made it my personal mission to always come out with the softest freshest bread. I'm quite sure this version is already better than most and already worthy of release, but the perfectionist me is still working at that unforgettable one that's worthy of being called pandesal ni pandesal girl. ☺

This start of the year, many of us have probably revisited our health goals and created new resolutions. But as you've probably experienced, a significant long lasting change is most likely achieved by making small steps practiced consistently, such as making minor switches in our food choices. I can't think of a better example than switching to olive oil in our cooking.

"Two or three tablespoons of extra-virgin olive oil each day can provide an immune system boost because olive oil has anti-inflammatory properties and is a good source of antioxidants... Look for extra-virgin olive oil, the first press of the olives with the highest concentration of antioxidants."

And what simpler way to do it than by incorporating olive oil into the bread that we eat everyday, like focaccia. Not only is it full of healthy ingredients like extra virgin olive oil, garlic and herbs, it's yummy too! And very versatile! You can eat it on its own, use as a sandwhich base, partner with cheeses and meats for grazing, the possibilities are endless. This is honestly one of the easiest and yummiest health food that our family enjoys.

One way or another we all were affected by Covid, yet who would have thought that this would instead be the cataylyst for me to launch my dream bakery? It has been a busy Christmas week in our kitchen and we're very grateful for your orders. Taking a much needed rest today but resuming bakes tomorrow. All deliveries in the coming days will be in the afternoon; except for Dec. 31 where it will be delivered by noon. Please ensure that your orders for specialty breads like Swedish Tea Ring are in by Dec. 29. Thank you!
