No-Bake Chocolate Éclair Cake – Full Recipe 🍫✨

Ingredients

For the cake and cream layer:
• 2 packets (approx. 100 g) instant vanilla pudding mix
• 3 cups milk
• 1 can (225 g) whipped cream (Cool Whip), thawed

For the layers:
• 2 packages graham crackers (about 24–28 pieces)

For the topping:
• 1 can (450 g) chocolate cream



Preparation Steps

1. Prepare the pudding mixture:
• In a medium bowl, whisk together the vanilla pudding mix and milk.
• Once smooth, add the thawed whipped cream and gently fold in with a spatula.

2. Make the cake base:
• Lightly grease a 9x13-inch (approx. 23x33 cm) baking pan.
• Arrange the graham crackers in a single layer on the bottom. Break them if needed to fill in any gaps.

3. Build the layers:
• Spread half of the pudding cream over the crackers.
• Place a second layer of crackers on top.
• Spread the remaining pudding mixture over this second layer.

4. Chill:
• Cover the pan with plastic wrap and refrigerate for 30–60 minutes to allow the pudding to firm up slightly.

5. Chocolate layer:
• Soften the chocolate cream in the microwave for 10–15 seconds.
• After mixing well, spread it evenly over the pudding layer.

6. Final resting:
• Cover again with plastic wrap and refrigerate for at least one night. This ensures the crackers are soft and complement the cream.

7. Serving:
• Slice before serving and sprinkle with grated chocolate or cocoa powder if desired.



Tips:
• The crackers must be completely submerged in the pudding, otherwise they will remain hard.
• Do not microwave the chocolate cream for too long; heat it until it becomes liquid.
• Serving the next day is ideal for the flavors to blend together.

Cream Cheese Velvet Cake

Ingredients

For the cake:
• 225 g cream cheese (at room temperature, softened)
• 1/2 cup vegetable oil
• 1 cup granulated sugar
• 3 large eggs
• 1 teaspoon vanilla extract
• 1 + 1/2 cups flour
• 1 teaspoon baking powder
• 1/4 teaspoon salt

Glaze (optional):
• 1/4 cup powdered sugar
• 1–2 tablespoons milk or cream



Preparation
1. Preparation:
Preheat the oven to 350°F (175°C).
Grease a 9-inch (22–23 cm) springform pan and line the bottom with parchment paper.
2. Prepare the cream cheese base:
In a large bowl, beat the cream cheese until smooth and creamy.
Add the sugar and continue beating until the mixture is light and fluffy.
3. Eggs:
Add the eggs one at a time, beating briefly after each addition.
Stir in the vanilla.
4. Dry ingredients:
In a separate bowl, mix the flour, baking powder, and salt.
Using a spatula or low speed, fold the dry mixture into the wet mixture.
Do not overmix, just until combined.
5. Baking:
Pour the batter into the pan and smooth the top.
Bake for 30–35 minutes or until a toothpick comes out clean.
Remove from the oven and let cool completely in the pan.
6. Glaze (optional, for a nice touch):
Mix powdered sugar + milk to make a runny sauce.
Drizzle it in a thin line over the cooled cake.



Tips
• The cream cheese must be at room temperature; if it's cold, it will leave lumps.
• For a more aromatic result, you can use a little extra vanilla.
• The texture of this cake improves when left in the refrigerator overnight.
