I’ve always been fascinated by Japanese baking

There’s something about the bakery culture over here that’s always inspired me

I remember years ago thinking to myself… I’d love to know how some of this is done

Later this week while we’re away, I’ve been lucky enough to get the opportunity to spend some time with a baker over here, see how they do things and share our passion for baking 🙂

I realised something lately…

I grew up surrounded by a family of bakers

Growing up, like my own children now, I’d see my dad working in the mornings before school
and from time to time I’d visit my uncles and aunties in their bakeries too

Back then, I don’t think I fully understood what I was looking at

Over time I’ve come to realise everyone slowly shapes their craft in their own way

The years of experience, the lessons, the little details you pick up along the way… eventually it becomes something that reflects you

I think that’s what makes people so proud of what they’ve built

Lately, I’ve realised how much I enjoy learning again. Experimenting, trying new things and being able to turn an idea into something real

Maybe that’s what the journey is really about… slowly becoming your own version of it all.

Upcoming Closure 🙂

This one’s a long one… actually the longest closure we’ve taken since we started running the bakery 7 years ago 😅

We'll be closed from next Monday 18 May and
will reopen Wednesday 10 June

It’s been in the works for a while
We’re taking a big trip, making some memories together as a family, and I’m looking forward to exploring a bit, getting inspired and experiencing a few new things along the way 🙂

I really appreciate all the support lately especially around the sourdough and all the kind messages that have come with it. It’s been exciting seeing the response and where we can take this

Thank you to everyone who’s been checking in over the past couple of weeks asking about the sourdough and when it’ll finally be ready 🙂

It’s taken a little longer than expected getting everything together behind the scenes, especially with some delays getting the bannetons sorted… but I didn’t want to hold things back any longer, especially heading into Mother’s Day weekend

So we’re starting

For now, the sourdough will be available in our cob loaves while the rest of the gear arrives, with small batches as I continue refining things behind the scenes

Tomorrow’s flavours:

• Plain
• Rye
• Sundried Tomato & Olive

Available tomorrow only until sold out 🙂
We’ll also have samples in store if you’d like to give them a try

Still lots to learn and refine… but honestly, I’m just excited to finally share this part of the journey with you all ❤️
