I was given the cutest set of instructions for this cake and the brief was very clear, 3D foil balloons must be on top. So cute!

This cake is a rich chocolate cake filled with caramel and wrapped in a vanilla buttercream adorned with the must have fondant foil balloons.

I got to make my own wedding cake - wooo!
It was a cake of firsts, first time making swiss meringue buttercream (vanilla bean flavoured) and making a two tiered cake. The bottom tier is a chocolate cake filled with dark chocolate ganache and a homemade mixed berry jam, and the top tier is a vanilla cake filled with cinnamon apples and vanilla custard. All finished off with beautiful dried florals.

For Christmas dessert this year I wanted to have a go at lemon meringue but with a slight twist - adding some berries!

Homemade sweet crust pastry, lemon curd, mixed berry compote all topped with swiss meringue! Went down a treat.

Last weekend’s bake was a Where’s Willy–themed chocolate cake filled with dark choc ganache + homemade mixed berry jam, topped with a custom edible image (printed by The Cake Shop) of the birthday legend himself!

A perk of baking for work mates - I get to eat the cake, and I can confirm it was delicious!!
