👀 Did you know, people who are gluten sensitive report that they tolerate spelt better than wheat? That's why we include one third spelt flour in all our bread 🌾

Now we know what you're thinking.. What is it exactly? 👉🏻 Well, spelt is an ancient variety of wheat that's been cultivated since 5000 BC. Along with essential nutrients like iron, magnesium, and zinc, it's also higher in protein.

Most importantly, spelt has a different form of gluten that is more water-soluble and is easier for your body to break down. When this gentler form of gluten is combined with a fermented starter and a 24-hour rise in our bread, it makes for an altogether more digestible loaf.
