I’ve been wanting to make a cake like this for ages because I think they look so pretty and the colours and possibilities are endless. This one was shades of pink and red and I used stabilised chantilly cream to “ice” the two layers of white chocolate cake. On top are various shades of pink meringue kisses, the last of the summer berries and some beautiful macaroons that I can’t take any credit for. I cannot get mine perfect and it really annoys me 🤬.

Hi guys. I would love to do my bit to help out Hawke’s Bay through my baking because who doesn’t love something full of sugar and butter?!

So nominate a friend or even nominate yourself, I don’t mind. Explain to me why you think this person might appreciate a half dozen of my yummiest cupcakes. It might be for someone you think is struggling with it all and could use a pick me up.

Also, does anyone know where most of the volunteers are based (ie army, police etc)? I would love to take some round to them.

Anyway, get nominating and I’ll start baking.

My baking efforts for new years. Nests of meringues with mascarpone cream, and compote topped with summer berries. They were super delicious! Also I cheated and beefed up the kale salad with bacon pine nuts and pomegranate.
I can make these for anyone. just need to do it last minute sk they don’t go soggy. A great alternative to a traditional pav!

Glazing Digbys Father’s Day cake. I think I’ve found the perfect mirror glaze recipe that isn’t so sickly sweet. I find watching this incredibly satisfying!

A cake with almond dacquoise, white chocolate mousse, strawberry gel, whipped white chocolate and hazelnut ganache, raspberry mousse, all topped of with a super shiny berry mirror glaze.

A few years ago I decided to make digby an entremet for his fathers day dinner. It has become something of a tradition now as I love the idea of different flavours and textures coming together to make a taste explosion. This year Harriet and I had a lot of time on our hands in the last few days with a nasty cold so we decided to get really technical (possibly because we are addicted to MasterChef aus). We have made a double berry and chocolate panna cotta entremet. This consisted of a chocolate Genoise sponge, a rich chocolate panna cotta, toasted hazelnut ganache, a tangy double berry mousse and all topped of with a double berry mirror glaze that was so shiny you could see your face in it!
I think this sort of thing is a really nice alternative to a traditional birthday or celebration cake. We had a lot of fun making it with all of the little elements that we used to decorate it (we made mini macarons, meringue kisses, meringue shards and toasted hazelnuts).
