Fast and Fresh Sourdough Fish Sliders 🐟🍔
Ready in no time, these bite-sized sliders bring together plenty of fresh flavour and satisfying crunch in every bite!

You’ll need

¼ cup mayo
Zest of 1 lemon
2 tablespoon finely chopped chives
Pinch cayenne pepper
¼ teaspoon garlic powder
300g firm white fish
1 egg, lightly whisked
¾ cup gluten free breadcrumbs
1 packet Venerdi sourdough sliders
Sliced cucumber to serve
Rocket leaves to serve
Oil for frying
Salt and pepper to season

Method

1. Mix together the mayo, lemon zest, cayenne pepper and garlic powder. Taste and season generously.
2. Dip the fish into the egg and then roll in the gluten free breadcrumbs to coat.
3. Heat a generous glug of oil in a pan over a medium-high heat.
4. Cook fish until golden on both sides and cooked through.
5. Cut the sliders in half and lightly toast the cut side.
6. Spread the bottom half of each slider with the chive mayo. Lay a piece or two of cucumber on top.
7. Break the fish into smaller (slider-size) pieces and add to each slider bun. Top with rocket leaves.
8. Serve immediately.

Venerdi Pesto Chicken Pull-apart Sliders 🍃🧀 🍗

Golden, cheesy, and packed with herby pesto flavour, these Venerdi Pesto Chicken Pull-apart Sliders are the ultimate crowd-pleaser. Filled with tender chicken, gooey melted cheese, and finished with a buttery garlic topping, they're perfect for sharing at parties, game nights, or an easy family dinner

Makes 5 pieces
1 cup shredded chicken
2 tablespoons good-quality pesto
½ cup grated cheese
½ cup grated mozzarella
1 packet Venerdi sourdough sliders
3 tablespoons garlic butter, melted

1. Preheat oven to 180 degrees
2. Place the shredded chicken and pesto into a bowl. Toss to evenly coat the
chicken. In another bowl mix the two cheeses together.
3. Without separating the buns, cut horizontally the way through. Place the bottom
half of the rolls cut-side up on a piece of tinfoil that’s large enough to wrap it all
up once you’ve filled the buns.
4. Pile the pesto chicken onto the buns. Spread out evenly.
5. Sprinkle the cheese blend on top.
6. Brush half of the garlic butter over the cut-side of the top half of the bread.
7. Place the top piece of bread over the filling. Brush the garlic butter over the top
and fold the tinfoil around it all.
8. Bake in the oven for 15 minutes until heated through. Bake another 5-7 minutes
uncovered.
9. Pull apart and enjoy.
