A normal day in our message inbox: "Lychee chiffon today?" "Do you do the lemon meringue croissant?" "Floss bun?" "Any cinnamon rolls left?" "Shio pan?" "Anything gluten free?"

The answer to all of it is yes, we make it — just not all on the same day or same hour🤣. We bake in waves throughout the day, so the cabinet keeps changing and most fresh possible.

The gluten free one is the easy answer though: all of our Basque cheesecakes are gluten free by default.

For everything else, easiest thing is to ask us just a simple message. And when enough people ask for the same thing, it comes back around sooner. For whole cakes on a particular day, we usually need 48 hours' notice although a couple more days would be appreciated :).

New on the drinks list: the Hojicha Fog.

Earl Grey brewed strong over hojicha — we use Kaze, so it's roasted and nutty rather than grassy — finished with a cap of cheese foam. Slightly salty, slightly sweet, and low in caffeine, which makes it a good late-afternoon one.

Best drunk straight through the foam.

The Chit Chat Chocolate Croissant is officially out of "quality control" and into the cabinet — a delicate, flaky croissant piped full of chocolate cream and crowned with Griffin's Chit Chat Original.

And if you're more of a ginger person… the Gingernuts Basque Cheesecake is right there next to it. Burnt top, molten middle, that spiced Griffin's Gingernuts base. Winter in a slice.
