Feijoa & white chocolate mallow puff ☁️

This one’s for me! There are many challenges, skills and techniques, that I wanted to push on. Before this mallow puff I was yet to make a marshmallow that could be piped and hold its shape, a biscuit that’s could stay crispy, and a jam that wouldn’t make the whole thing soggy. I also learned how to temper enough white chocolate to dip 100 of these cuties. All big wins for this one simple treat.

Feijoa jam, brown sugar sable, marshmallow, white chocolate.

MOUSSE AU CHOCOLAT DE MAMI 🍫

My grandmother (Mami Framboise) makes the best chocolate mousse you could ever ask for. Does mine compare? HARDLY. But I did my best, with her original recipe.

Tradition has it that whoever made the mousse has to hold the bowl upside down above their head. If the mousse doesn’t fall, it’s good to eat.
