Bonzopan Hi everyone! I've started to bake with sourdough during the second lockdown. After a lot of fails, plenty of bricks!

I finally started to achieve very good bakes, and also started to experiment with sweets and other baked goods.

150g spelt
150g Minchins Milling high grade
200g strong white
385g Stout worth + water
Flax seeds and roasted barley.
Not a fan of the big holes, but I really like how the loaf came out 😍

375 g water
120g levain
10g salt
For the onions
Onions
Olive oil
Garlic
Bay leaves
Salt and pepper
Gently sweat and simmer

After a chat with an experienced baker I've decided not to call my bread ciabatta, but sandalo 🤣
