🥐 A little Sunday indulgence and some exciting news! 🍞

Today, I baked some Norwegian cinnamon buns (kanelboller) to make Sunday a little sweeter. And just in time, a wonderful delivery arrived from Sigdal Mill: organic, stone-ground wheat, spelt and einkorn flours! 🌾

I couldn’t wait to try them, so I’ve already baked some delicious, wholesome loaves of bread. At my workshop on November 7, you’ll get to discover these special flours too, and of course, we’ll bake with them together! ❤️

There are still a few spots available! If you’d like to join, I’d love to welcome you for an inspiring day filled with the joy, aromas and magic of baking.

🥐 Vasárnapi kényeztetés és izgalmas újdonságok! 🍞

És természetesen most sem tér haza senki üres kézzel! ❤️

A workshop végén mindenki hazaviheti:

🥯 a saját készítésű bageleit,

🥨 a finom, házi bajor pereceit,

🍫 és egy tálca házi zserbót!

Mindezt egy vidám, inspiráló, közös sütéssel töltött nap keretében, ahol új technikákat tanulhatsz, tapasztalatokat cserélhetsz, és együtt élvezhetjük a frissen sült finomságok illatát és ízét. 🥰

❤️ Jelentkezés és helyfoglalás

A helyek száma korlátozott, hogy mindenkire elegendő figyelem és idő jusson a közös sütés során. 🥰

Ha szeretnél velünk tartani, jelentkezz privát üzenetben!

A helyed a 300 kr összegű előleg megfizetésével válik lefoglalttá.

Szeretettel,

What’s on the menu this time?

🌾 Healthy organic bread – we’ll explore the organic, stone-ground flours from Sigdal Mill and use them to make a wonderfully wholesome and delicious loaf of bread. You’ll take your shaped loaf home in a proofing basket (banneton) and bake it fresh in your own oven the following day. Please note that the proofing basket is not included in the workshop fee. You’re welcome to bring your own basket, purchase one from me at the workshop, or borrow one of mine. ❤️

🥨 Delicious bagels and traditional Bavarian pretzels – you’ll learn how to make these irresistible treats.

🍫 A taste of Hungary: the famous Gerbeaud cake (Zserbó)! – with Christmas just around the corner, I’d love to share a little Hungarian festive tradition with you. We’ll make this much-loved classic with layers of pastry, walnuts, apricot jam and a delicious chocolate topping. It’s a true Hungarian favourite and a wonderful taste of Christmas! ❤️

One beautiful Sunday afternoon, I decided to bake the world’s best cake. 🎂

In Norwegian, it’s called “Verdens beste kake”, which literally means “the world’s best cake.”

Norway actually has a cake with this rather bold name. 😊
I’ve been living in Norway for 6 years and have been working as a pastry chef for 1 year, yet I only heard about this cake a few weeks ago. 🤭

A lovely acquaintance of mine told me about it. He had visited Oslo and wanted to try Verdens beste kake, but unfortunately, he wasn’t able to find it.

I’ll link her video in the comments — go and watch it to find out what happened to him! 😄

So, after hearing this story, I thought: why not bake it myself? ❤️

And since I made it, I thought I’d share the recipe with you as well, so if you feel inspired, you can make it at home too.

🎂 Verdens beste kake – the recipe

Sponge cake:

I made a sponge cake using 6 eggs and baked it in a 22 cm cake tin. Once it had completely cooled, I cut it into 3 layers.

Vanilla pastry cream:

🥛 400 ml milk
🍚 80 g sugar
🥚 60 g egg yolks (about 3 large egg yolks)
🌿 Seeds from 1 vanilla pod
🌽 28 g cornstarch

I brought the milk to a boil, reserving a small amount of the cold milk from the 400 ml.

In a heatproof bowl, I mixed the sugar, egg yolks, vanilla seeds and cornstarch with the reserved cold milk until completely smooth.

While continuously stirring, I slowly added the hot milk to the egg mixture. I then cooked the mixture until it thickened into a smooth pastry cream and left it to cool completely.

I whipped 600 ml of cold heavy cream with a little powdered sugar, according to taste, until stiff.

I set aside a small amount for covering the sides of the cake. I then gradually and gently folded the remaining whipped cream into the cooled vanilla pastry cream to create a light and fluffy filling.

I divided the cream into two portions and used it to fill the cake.

I covered the sides with the reserved whipped cream and placed the assembled cake in the refrigerator.

🤍 And finally, the meringue!

For the topping, I prepared a meringue using:

🥚 50 g egg whites
🍚 100 g sugar

I heated the egg whites and sugar over a bain-marie, stirring continuously, until the mixture reached 65–70°C.

Then I whipped it with a stand mixer until it had completely cooled and became glossy and stable.

I spread the meringue over the top of the cake, sprinkled it with sliced almonds, and lightly toasted the surface with a pastry torch.

And there it was…

✨ THE WORLD’S BEST CAKE! ✨

Or at least, according to its name, it certainly is. 😄🇳🇴

Have you ever tasted Verdens beste kake?

If you have, I’d love to know: do you think it really deserves its name? ❤️............................................

Norvégul: Verdens beste kake – vagyis „a világ legjobb tortája”.

🎂 Verdens beste kake – recept

🤍 A tetejére jöhet a meringue!

Vagy legalábbis a neve szerint biztosan az. 😄🇳🇴

Ti kóstoltátok már a Verdens beste kake-t?
Ha igen, kíváncsi vagyok: szerintetek tényleg kiérdemli a nevét? ❤️

I chose two varieties of flour from Sigdal Mølle, Dala Landhvete and Mirakelhvete (a very strong flour), and baked a baguette, a loaf of bread and a sweet braided bread filled with vanilla cream and jam. Everything turned out absolutely delicious! 🥖🤍

At our November workshop, we will try these special Norwegian flours together! 🌾

A novemberi workshopon ezeket a különleges liszteket együtt is ki fogjuk próbálni! 🌾

This weekend, I visited Sigdal Mølle, located about 100 km west of Oslo, in the beautiful Sigdal Valley, right by a river. A watermill used to stand on the site where the present-day mill is located. The mill produces flour from locally grown, organically cultivated grains (spelt, emmer, einkorn, rye and traditional landrace wheat varieties), traditionally stone-milled on site.

I also took part in a sourdough demonstration held in the mill’s barn, where we sat on straw bales and learned more about the baking process. Afterwards, we were given a tour of the mill and got to follow the journey of the grain from its arrival at the mill, through milling, all the way to packaging. There was, of course, some tasting involved as well! The mill also has a lovely little shop, where I stocked up on flour to take home and experiment with.

--------------------------------------
A hétvégén a Sigdal malomban jártam, amely Oslótól mintegy 100 km-re nyugatra, a festői Sigdal-völgyben található, egy folyó partján. A jelenlegi malom helyén korábban vízimalom működött. A malomban őshonos, ökológiai termesztésből származó gabonákat (tönkölybúzát, tönkét, alakort, rozst és szárazföldi búzafajtákat) őrölnek hagyományos köves malomban.

Részt vettem egy kovászos bemutatón is, amelyet a malom pajtájában tartottak – szalmabálákon ülve hallgattuk a bemutatót. Ezután körbevezettek bennünket, és végigkövethettük a gabona útját a malomba érkezéstől egészen az őrlésen át a csomagolásig. Természetesen kóstolásra is sor került, a malom mellett pedig egy kis bolt is működik, ahol alaposan bevásároltam, hogy otthon én is kipróbálhassam a különleges liszteket.

🥔 Sourdough Potato Bread

At our last workshop, we made potato bread, and I loved it so much that I’ve baked it several times since. ❤️

If you’d like to try it at home, here’s the recipe! Give it a go, bake a delicious potato sourdough bread, and send me a photo of how it turned out! 😊

And if you’d like some sourdough starter, feel free to reach out — I’m happy to share mine. 🥰

Ingredients:
• 500 g bread flour
• 200 g mature, active sourdough starter
• 2 medium potatoes (200–250 g)
• 250 g water or potato cooking water
• 20 g oil
• 10 g salt

Method:

1. Boil the potatoes until soft, mash them, and let them cool completely to room temperature together with the cooking water.
2. Mix the flour, starter, oil, mashed potatoes and about 200 g of water. Add the remaining water gradually if needed. After a short rest, add the salt and knead until smooth and elastic.
3. Place the dough in a lightly oiled, covered bowl. Perform 3 rounds of stretching and folding, resting for about 40 minutes between each round.
4. Shape the dough and place it in a floured banneton. Proof overnight in the fridge, or for about 5–6 hours at room temperature, depending on the temperature of your kitchen.
5. Preheat the oven and Dutch oven with the lid to 250°C. Bake covered for 20 minutes at 250°C, then remove the lid, reduce to 200°C and bake for another 30 minutes. Cool completely on a wire rack.
Happy baking! 🥔🍞❤️

🥔🍞❤️🥔🍞❤️🥔🍞❤️🥔🍞❤️🥔🍞❤️🥔🍞❤️

🥔 Burgonyás kovászos kenyér

A legutóbbi workshopon burgonyás kenyeret készítettünk, és annyira megszerettem, hogy azóta többször is megsütöttem. ❤️

Hozzávalók:
• 500 g kenyérliszt
• 200 g érett, aktív kovász
• 2 közepes burgonya (200–250 g)
• 250 g víz vagy burgonyafőzővíz
• 20 g olaj
• 10 g só

Elkészítés:

1. A burgonyát puhára főzzük, összetörjük, majd a főzővízzel együtt szobahőmérsékletűre hűtjük.
2. A lisztet, kovászt, olajat, burgonyát és kb. 200 g vizet összedagasztjuk. Szükség esetén hozzáadjuk a maradék vizet. Rövid pihentetés után beledolgozzuk a sót.
3. Lefedett, kiolajozott tálban kelesztjük. Háromszor hajtogatjuk, a hajtogatások között kb. 40 perc pihentetéssel.
5. A sütőt és a vasedényt fedővel együtt 250 °C-ra előmelegítjük. Fedő alatt 250 °C-on 20 percig, majd fedő nélkül 200 °C-on további 30 percig sütjük. Rácson teljesen kihűtjük.
Jó sütést! 🥔🍞❤️
