And tadaaaa!!!
This is something I have been working on during the last weeks, it is called "bollo de Requena" (Requena's bun). Basically it is enriched dough (13% !!!), very similar to a . I have the sense that this is the first one I have ever eaten/seen based on .
It is tightly topped with and cured and red pepper.
Requena-Utiel (in Valencia) is one of the most relevant wine regions in the country. This dish is very popular there, but you can find it in many parts of Spain, sometimes with name variations.
Again, I trusted with the meat and I am so happy about the results!
So, what is the meat?
Pork belly. This one was salted, not cured. Typically is cured but... this may have worked even better?
Chorizo. Fatty and mainly spiced with paprika and garlic. It is not strange to add more spices. This chorizo sausages were close to Spanish ones.
Longaniza (plain sausage). It is different from town to town. In my area, the spices within this sausage are cumin, garlic, clove, anise seeds and cinnamon. These were italian-styke , close enough!

I took samples of the dough used for this week's orders to do a bit of a quality check.
Basically an excuse to have pizza on Saturday night.
I used the usual crushed tomatoes 🍅 from .northerneurope, some 🧀 and chili flakes 🌶 with some panfried salted 🐷 from .
The meat was absolutely delicious, it was melting in our mouths. This was my first time buying from them and definitely not the last. I tagged them so they know 🤩

Finally taking orders in Oslo!
Now you can order products for this Thursday and Sunday!
In the picture you see a "pan de desayuno" which means frokostbrød. This is an intense loaf, 50% Dala landhvete and filled with walnuts. You can choose the version with sunflower seeds if you prefer it!
‼Only this week, you will get a free pizza dough for free with your "pan de desayuno" (frokostbrød) because I want you to try it for free 😄😄😄
Be aware that products are taken when ordered and the deadline closes 24h in advance due to the slow process of sourdough)!
