PEOPLE BEHIND POPOLO: meet Linda 🫶🏼

It took a whole bunch of crazy talented people to bring POPOLO to life. From the interior to the identity, the menu to photography and everything in between. It’s about time we give them the spotlight they deserve.

So, first up: Linda Gestman, owner of interior design studio & shop Studio — Alter in Leiden. A long-time friend of the business who, over the past few months, has become a familiar face in our design team.

Linda has an exceptional eye for aesthetics and a knack for bringing materiality and functionality together, knowing what looks good and what works well.

And navigating founders, project leaders and contractors, all with opinions of their own? Another skill she can add to her résumé

Hoi, ik ben Casper, een van de oprichters van Popolo. Je kent me misschien van Bartine, het café tegenover of de bakkerij in de Piet Heinstraat. Of als gitarist van The Indien. Begin dit jaar besloot ik mijn muziekcarrière af te sluiten en me volledig op onze zaken te richten, waaronder deze nieuwe zaak in de buurt waar ik al ruim tien jaar woon. Deze zomer openden we Popolo, met als vertrekpunt: wat voor sandwich zouden we zelf willen eten? Daar bouwen we de zaak omheen, met brood en toppings die we zelf maken.

In augustus kwamen jullie met meer mensen een sandwich halen dan we hadden durven hopen. Dat geeft veel energie én maakt duidelijk waar we nog moeten verbeteren. Deze week testen we een andere manier van bestellingen opnemen om de wachttijden te verkorten. Ondertussen verfijnen we onze recepten, zoeken we naar betere verpakkingen en werken we aan een menu-update voor eind deze maand. Popolo is een ‘work in progress’: iedere week leren we bij en passen we dingen aan.

Hi, I’m Casper, one of the founders of Popolo. You might know me from Bartine, our café across the street or our bakery on Piet Heinstraat. Or as the guitarist in The Indien. Earlier this year, I decided to step away from my music career to focus fully on our businesses, including this new spot in the neighbourhood I’ve called home for over ten years. We opened Popolo this summer with a simple question: what kind of sandwich would we want to eat? That’s what we’re building the place around, making our own bread and fillings along the way.

More of you came by for a sandwich in August than we’d dared to hope. It’s given us plenty of energy and shown us where we need to improve. This week, we’re testing a different way of taking orders to bring waiting times down. We just wanted to take a moment to say thank you to everyone who’s stopped by in our first few weeks. Overwhelmed, slightly sleep-deprived, and still buzzing, we couldn’t be happier with all the love so far!

We’re still finding our rhythm over here, tweaking and developing as we go. Next week we’re launching a new sandwich 👀

Our opening post took a little longer than expected... Mainly because you all kept showing up. We honestly can’t believe we’ve sold out almost every day since launch. A huge thank you to everyone who came by, celebrated with us, brought friends, and made our very first days feel so special. Now, if you’ll excuse us, we’ve got more bread to bake. We’re open Monday - Sunday, come say hi!
