1. increases the chances that your date is available;
2. increases the choice of possible options (since I will have more time to plan and complete work on your individual order);
3. reduces the cost of your order (since it allows me to buy ingredients and supplies in bulk in advance);
4. reduces the level of your fuss and stress on the eve of your party.
❗Also, keep in mind that discussing orders, confirming details takes time because both you and me are busy people.

🍰⁉️CULINARY, MATS (baking sheets) - silicone, teflon, parchment. Which one to choose?
You probably need them all; each one performs its specific task better than the others.
It's important to note that their use depends on the type of baking, the characteristics of your oven, and your personal comfort.
I'll tell you when I use each baking mat.
🔹Silicone mat: kneading and rolling out dough, working with caramel, chocolate, and fondant, piping marshmallows.
🔹Silicone mat with sides: baking sponge cakes, financiers, etc.
🔹Perforated silicone mat: baking tartlets and other shortcrust pastry, baking eclairs and other choux pastry, baking gingerbread.
🔹Teflon: for baking honey cakes, baking and drying meringues, baking macarons, baking puff pastry, etc.
🔹Siliconized parchment: for rolling out sable (shortcrust dough).
🔹Aluminum foil: for baking sponge cakes in pastry rings.
