Good morning! 🌲✨

We hope to see you today, right before our Holiday break. To celebrate Christmas time, we’ve been making some pretty special specials! The bakery has never smelled so good or cosy.

- mince pie (rum & caramel soaked dried fruit, apple and almond frangipane in a crispy flaky crust, no meat!)
- snowball mini Bomboloni filled with sage custard
- Christmas cake (also for sale as a whole)
- Chocolate & Maple syrup ganache cake (also for sale as a whole)
- fruit & nut bread
- focaccia & flutes
- mini version croissantjes, pain au chocolatjes and sweet danishjes filles with vanilla custard and hazelnut for Christmas morning breakfast
- gingerbread dough for cookies & a gingerbread house to gift or craft with
- cruffin with chocolate & orange custard and candied orange peel

We also have extra extra loaves for your freezers when days turn to normal again and no sweet fruit breads are wished for any longer (do these days exists?).

Open from 9.00 - 14.00 today and afterwards closed until the 4th of January.

Christmas when I grew up felt most Merry on Christmas morning. The smell of boiled eggs, fresh orange juice and fresh baked afbakbroodjes filling our noses. We always had a selection of different rolls, next to eating heaps of kerststol, perfecting our schmearing-habits year after year (one year the layering got too intense). The tiny versions made you feel like; yes, I CAN have stollen and eat my croissant, pain au chocolat and broodjes too 💪.

Feeling inspired by little ones (hey Otto 😍) and ready to sit down and making our own new family traditions, we’re introducing something new this year. Next to having a delicious fruity & nutty loaf for you this Christmas, we’re also offering small breakfast viennoiserie! Also, it is very cute to see a mini croissant and we we’re all pretty smitten seeing the tiny collection ☺️.

You can pre order your breakfast in our webshop for €6,-, consisting of a teeny tiny croissant, pain au chocolat and a seasonal danish with vanilla custard and hazenuts. You can also come by on the the 24th to choose your (also normal sized) pastries and breads. We’ll be open until 14.00, afterwards we’re lucky to get some rest and connect with loved ones. We hope you can do the same.

We’re looking forward to baking for your Holiday traditions and to see you this week before we close for the last week of 2022!

It’s time for a little rest here in huize Ulmus. But until then, we have many treats up our sleeves to make sure you’re ready for Christmas! Flûtes, fruit&nut breads, mince pies, and… inimini breakfast goods (tomorrow more information on this teeny tiny Christmas special).

So if you need, take your breadbags and make some space in your freezer, we’ll make sure to have plenty to last you for our week of zzzz!

Jolly Jolly, it’s time for another DIY classico! We’ve been mixing and packing dough for your Christmas cookies and gingerbread houses!

This spiced dough is nice and snappy when baked, full of ginger flavors- backed up by cinnamon, clove and nutmeg; the ultimate Christmas choir. It’s sweetness coming from maple syrup and brown sugar. We hope you’ll love it!

So get cosy, stay inside (well after a visit to us ☺️) and spend some time baking side by side. We would love to see what your houses turn out te be and how long your Christmas ornaments will last on the tree. (This rhyme was for free, o jolly jolly me).

Also on the counter this Saturday: Boston Cream Bomboloni’s, pretty boozy mince pies, Christmas cakes and lovely loaves (pumpkin polenta!!).

Cosycosy! Last Sunday we made 680 pepernoten for many kids who will celebrate Sinterklaas for the very first time in the Netherlands. We had a ball (yes yes) making them and especially giving them away, hopefully sharing some comfort and joy. We can’t stop rolling!

Lucky us, we received a letter from Sinterklaas & Piet to say they’re coming by in the night of Wednesday the 30th. They asked if we knew some kind kids who could miss their shoe for a bit. Off course we would love to host some shoes! We’ll provide the carrots for the horse and pepernoten, Sint will do the rest!

Let us know if you’re coming by on Wednesday, how many shoes you’ll bring (1 per child) and note to come and pick up the shoe on Thursday between 8.30 & 4! Letters/drawings not required, but very kindly passed on :)!

Hopefully we get to see some magic in the eyes of many kids!

(If you want to join but not in the situation of being able to miss a shoe, or use an oven - let me know so we’ll find a fitting alternative!)

The pumpkins have been finding their way to the bakery in all their beautiful shapes and colors for a while now. Some of you have already tried our Pumpkin custard in the Bomboloni, pumpkin spiced custard as our cruffin filling and also enjoyed a slice of pumpkin pie.

It was a bit daunting to make a pumpkin pie, hearing about the magical seasonal deliciousness from friends (hey ) from America, but never trying it myself. Canned pumpkin seemed to be the main ingredient. But all those beautiful fresh pumpkins arrived, so I gave myself permission to bend the rules and try for a filling. Luckily we have great tasters who come by regularly (hey ) and gave me the courage to move on with the recipe.

We’re now very happy with what we call pumpkin pie. A flaky pie crust filled with a cream & fresh roasted pumpkin based custard, full of flavor from spices (yes ginger 👀).

I heard through the grapevine that some might like to order a pie for a special occasion next week (Thanksgiving). We are ready! You can order your pies by sending an e-mail to [email protected] with your name, pick up date and phone number and we’ll get to roasting pureeing and baking!

Per all organic pie: 8 big slices (as pictured), €24. Comes in a box that needs a big bag (yours) to travel to your festivities. We’re baking on Wednesday-Sunday. Pick up times from 9.00-16.00 (Sunday 10.00-15.00), between Friday 18 & Sunday 27. Paying at the bakery by card.

We have exciting plans for the weekend! Yes, for me that exciting plan consist of finding a quiet nook with a coffee, a croissant and a good book - something I do not get to do that often anymore these days (not often meaning never, but I’m trying not to be too dramatic about it 😱).

Not too long ago I stumbled upon , where I found this gem of a book - and I knew a moment like this would be in reach again soon. I got so excited about the prospect that we decided to organize a Pop-Up where Zeyneb and Joy will display their incredible pre-loved art book collection at the bakery. And hold your horses; this is happening Friday, Saturday & Sunday!

Come along and browse, pick up an inspiring art book, enjoy a pastry (making Boston Cream Bomboloni Saturday, just leaving that there) and a coffee to celebrate the coming of this new season, two young and intelligent lady entrepreneurs, art books and all cosyness.

Sad note; after taking this picture, I did not have time to finish the croissants, coffee or read more than this one page. Still - I was closer then I have been for a while and it was great :).

You might read this while you’re snuggling onder your blankets in bed, trying to figure out if you’re staying there for the day or - if you might go outside today. Hearing the rain against your window and feeling the cold when you swing out your legs and when your feet land on the crisp floor, you realize.. FALL IS COMING! Yeeehaw!

I hope we made the right cruffin for you to celebrate this cosy cosy Sunday. Since we adore butter at the bakery (and in our private lives I mist add), we often try to think of more ways to celebrate this golden dream. Eva mentioned a beurre noisette custard the other week and it had not left my mind since. Making a beautiful batch of browned butter filled the bakery space with a scent you can only love and mixed in with a creamy custard, we were happy; the dream came true.

We hope this is enough motivation to put on your rain suit or get comfortable under the umbrella and swing in by. Knowing you’ll get to enjoy this cruffin with a warm cup of coffee by its side. Today is the last day of the week you can get one, but I’m sure this custard will be back soon - not only in my dreams.

A little while back we were asked to bake for a wedding for one of our loyal and long while customers. With clammy hands I said YES wholeheartedly (they did too 😍) - poehee what a task! I must admit to have been quite nervous for the endeavor, testing bakes and flavors that would suit their dreams and wishes for weeks on end (sugar rush included).

It’s so lovely to make food for a life event, to add a little bit to the honor of a special day. These days being a wedding, birthday or a funeral.

This weekend (or however long it will last) we have a similar cake to the one pictured on the counter. Cherry and aniseed layered cake, with a lush orange blossom buttercream and beautiful end of Summer flowers.

We hope to make your day special, wedding or not, there can be cake 💁🏻‍♀️!

Are the sunny last summer days upon us? The temperatures keep surprising me (and my choice to wear a jacket and socks again), expecting for temperatures to drop drastically for a while now. Ah the weather - such a nice topic to spend our time talking about :).

What will match greatly with today’s warm rays of sunshine is our focaccia! Dressed generously in olive oil, sea salt flakes, rosemary and decadent snappy olives - the focaccia has been quite the hit this Summer! We also have a lot of fresh flowers from for sale by the bunch, if you’d like to treat yourself or a friendly neighbor with joy! Our sourdough bomboloni are filled with a lemon-thyme & lemon custard. Home made Thai basil or lavender lemonade is chilling in the freezer and all your coffees can be served on ice. We’ve been trying to capture the holiday feeling for a little while longer, can you tell?

We hope to see you today for sunny treats and smiles and hope to add an extra layer of happiness to your day!

Such a dream come true! We are selling the beautifully mesmerizing flowers organically grown by Sarai from Lokale Bloemetjes] this weekend (Friday, Saturday, Sunday)! Freshly cut this morning, these flowers are a reflection of the season, meaning; Dhaliaaaaaa’s! Tucked together in a piece of our emptied flour bags, two of my dreamworlds come together ☺️.

We have made small, medium & larger bouquets for you to pick from, prices from €12,50-€20. These flowers are grown with a lot of patience and respect for natures ways. We hope to continue that in our appreciation of their beauty.

You can also visit Lokale Bloemetjes] and spend some of the best moments there, picking your own bouquets on her fields. Beware of breathless moments and teary eyes by the sight of these gentle florals floating in the wind and happy beebums sticking out of their hearts.
