It is always very important for me to get feedbacks from my clients. And it’s even more valuable to hear about any comments or suggestions about what could be improved.
Having accumulated some very similar reviews from you, as well as taking into account my observations of the aesthetic side of the dessert, I came to the decision to change the glaze on one of my favorite eclair, Mango-Passionfruit eclairs🥭.
In the original version for this eclair, I used a mirror glaze based on mango puree. However, many clients noticed that, despite its beauty, the texture of the glaze didn't fit other textures in this eclair and didn't complement them.
For my part, I didn’t like the way the mirror glaze looked on the eclairs the day after glazing. The shelf life of eclairs is 4-5 days and naturally I want to be sure that the appearance of the eclairs during this period will still be aesthetic and attractive.
That's why about a month ago I completely changed the glazing for this eclair. Now it is made with my vegan white chocolate and natural mango powder. After this change, I began to receive only positive feedback🤗🤩
