Pineapple Chicken And Rice
Ingredients:
1. 1 pound chicken breast, cubed
2. 1 cup pineapple, cubed
3. 1 tablespoon olive oil
4. 1 onion, chopped
5. 2 cloves garlic, minced
6. 1 red bell pepper, diced
7. 1 cup jasmine rice
8. 2 cups chicken broth
9. 1 tablespoon soy sauce
10. 1 teaspoon ginger, grated
11. Salt and pepper to taste
12. 1/4 cup green onions, sliced
13. 1 tablespoon sesame seeds
Directions:
1. Heat olive oil in a large skillet over medium heat. Cook the chicken cubes until golden brown and cooked through. Set aside.
2. In the same skillet, add onion, garlic, and red bell pepper. Cook until the vegetables are softened.
3. Add the pineapple and cook for an additional 2 minutes.
4. Stir in jasmine rice, chicken broth, soy sauce, ginger, salt, and pepper. Bring to a boil.
5. Reduce the heat to low, cover, and simmer for 18-20 minutes, or until the rice is cooked through.
6. Return the chicken to the skillet, mix well, and heat through.
7. Serve garnished with green onions and sesame seeds.
