Cake flour, as the name suggests, is often called for in cakes, cupcakes, and some pastry recipes. Cake flour is a soft wheat, low-protein flour with a fine texture, milled from the endosperm of the wheat kernel. It is lighter and has very little gluten, making for tender and less dense baked items

*How to make cake flour*

*Items you need* :
✔️Cornflour

✔️All-Purpose Flour.

✔️Sifter/fine mesh sieve.

✔️Measuring cup.

✔️ Measuring spoons

Measure 1 level cup of all-purpose flour, remove 2 tablespoons of the flour and then place the flour into a bowl. Add 2 tablespoons of cornstarch to the all-purpose flour. Whisk together to combine and use as a substitute for 1 cup cake flour.

Dos and Don’ts of buttercream.

1. Don't refrigerate your buttercream cakes. It will sweat

2. Don't use mixer to mix ur icing sugar and butter. It will incorporate air into it thereby causing air bubbles. If u must, do so at very low speed and stop once it is mixed. Do not over beat.

3. It's good to level your cakes (for buttercream) but not entirely necessarily

4. Do not work with thin buttercream. It will drip down. Don't work with thick buttercream instead. It will pull your cakes.

5. Try not to work in a hot or cold place.

6. Do not allow your buttercream to crust before combing else you will have it rough.

7. It's best to work with shortening than margarine. Although it can be mixed with the ratio of shortening higher than butter. This is to allow u have a 'dried' buttercream.

8. Secret to sharp edge and smooth buttercream is on number 7.

9. Buttercream is alot easier than Fondant but not cheaper

10. Always keep your spatula at angle 90 before using.

11. Getting a brighter colour is sure if you adhere to number 7.
