" Ma'am, please I want my wedding cake to last till my one year anniversary."
This were the exact words of one of my pretty clients when she came to book her wedding cake.
Customers are the reasons why some bakers go extra mile to feed them with ingredients that might be harmful to their health.
You always wanting to have a baked product preserved for ages. When she told me those words, I took time to educate her on the phone and cons of such.
There are products that are last longer than other products. Majorly we preserve cakes with alcohol. Some people ask most times, " why put alcohol in a cake, where some persons beliefs kicks alcohol intake?"
Alcohol contains mild ethanol that helps in preservation. And absolutely the safest. We have other powdered preservatives which some are harmful to the vital organs in human body.
Yes, they can last for as long as you want. But I wonder if your body is a specimen meant to be in a museum or laboratory that you request for cakes that can last for years.
A good cake can last for a week or two without preservative not even with alcohol. When you use healthy and recommended preservatives it can last for 3 months or more. But not years.... I can't guarantee that.
Cakes can be preserved in the freezer or chiller and stays fresh so long as it is well wrapped.
Have you thought of reasons behind NAFDAC checking and testing products ?
Some bread labels you see things like " bromate free." This is exactly what I'm talking about.
Cake preservation is good, but not when you do it the wrong way. There are side effects attached to such practice.
I hope this helps.......
