Here are the *Do's and Don'ts of Buttercream*
1. Don't chill buttercream cakes* – they'll develop condensation (sweat)
2. Mix icing sugar and butter manually or use a mixer on very low speed to prevent air pockets (bubbles)
3. Level cakes are preferred but not mandatory for buttercream.
4. Use medium consistency buttercream; thin causes drips, thick pulls cake layers.
5. Prefer shortening over margarine or blend with more shortening than butter for dried finish. And also to achieve vibrant colors.
6. Comb buttercream before crusting to maintain smoothness.
7 Work in a room with stable temperature; avoid hot or cold space.
8. Secret to crisp edges and smooth finish, use shortening just as stated in tips 5
9. Buttercream is easier than fondant but not inexpensive.
10. Hold spatula at 90-degree angle when smoothing.
